Some Day Close to the Middle of the Challenge

Humph!  Apparently I was incorrect about the grumpiness being gone.  All week, I have been hungry and grumpy/angry.  Hangry, the girls I used to work with called it.  As in: "gotta make sure Tracey eats soon or she will get hangry!"

It doesn't help that I had to change my breakfast for this week's challenge.  The challenge being: no cheese or red meat.  My breakfast that works and doesn't make me hangry: cottage cheese and applesauce.  The first day I tried hard boiled eggs.  Gag!  No wonder my kids never liked them (now they love them actually).  I was hungry an hour later.  The next day I had yogurt and fruit.  Nope, hungry AND craving sugar/carbs an hour later.  After I had a chance to go to the store, I tried day three's breakfast of greek yogurt (half vanilla, half plain), raspberries and bran buds.  I couldn't finish it all and took half for a snack for later.  I wasn't hungry for hours, so at lunch time, ate the rest of my breakfast.  Very hesitantly I add, because soggy bran buds weren't holding much appeal.  WOW!  It was like eating a raspberry mousse.  It was excellent!  I had it again today for breakfast and later for a noon hour snack.

I mixed mine and it didn't look nearly this good,  nor did I add honey.

This week's challenge started out very rough as I don't like change especially when I have found something that works, but it turned out to be very handy because now I have a breakfast/lunch/snack that is very healthy and so yummy.

Gotta go prepare as much as possible for next week as I have to work again this weekend and next.  An entire month with one day off is quite the challenge food/sanity wise.  At least I am keeping busy which, if you have been reading you know, is better than bored because I eat then.
