Planning for a Long Winter


Well, I am down two pounds.  Finally!  Mostly because it’s been so busy at work.  Body Shop started a little over a week ago and it’s been crazy busy!  That is good, seeing as I mainly eat when I am bored.  I have two teams in the competition and so far, they are doing great!  It’s a hard six weeks though.  Hopefully, they learn a lot and keep going after the six weeks are over.

Today I am in cooking mode and if my freezers weren’t beyond full, I would still be cooking.  I am cooking a slow cooker turkey meatball chili, which smells amazing.  I made two cabbage casseroles with the cabbage I bought a while ago to make soup with and decided to make other soups instead.  I am roasting squash for my butternut squash soup and roasted the seeds too as a snack.  They taste exactly like pumpkin seeds, yum.  I cooked a sweet potato to make sweet potato bread later.  My daughter and I made some quick bars with sunflower seed butter, honey, skim milk powder and brown rice cereal.  These taste so good, I had to cut and freeze them immediately.  I washed and cut (my son washed actually) all of my vegetables.  And I am going to cut the cantaloupe and pineapple and have it ready for this week too.  Yesterday, I made oatmeal in a jar and we had one each for breakfast.  They are great tasting and very handy.  They are already pre-portioned in the mason jars that they were cooked in.  My menus are planned for this week and include many of the items I made today.  I am also going to make a salad with beans and/or tuna so I can eat that for my lunches.  Maybe I’ll make the quinoa pizza bites that I found on Pinterest too.  My fridge isn’t bursting at the seams yet…

I love it when I am this prepared.  It sets me up for easier mornings and evenings and those are busy enough when I’m prepared.  If only I could do this all of the time.  Oh wait, I can!  It requires planning and about four hours of spare time that could be broken up throughout the week too.  Nothing I can’t handle.  It may cut into my nap time, but I can sleep at night I guess.
Off to shower and change out of my jammies.  I just got out of bed and started cooking (not early either).  Wish me luck in my next 33 days.  I am still attempting to lose weight before Black Friday shopping.  I should check and see how my competition is doing.  She was getting her glow on at the YMCA United Way fundraiser on Friday night when I saw her last.
